Cracker Barrel Hashbrown Casserole
Ingredients
- Non-stick cooking spray
- 2 pounds hashbrowns
- salt and pepper
- 4 ounces butter
- 1/2 cup minced onion
- 8 ounces sour cream
- 10.75 ounces condensed cream of chicken soup
- 2 cups shredded Cheddar cheese or Colby cheese
Instructions
- Preheat the oven to 350 degrees F.
- Grease a 9 x 13-inch baking pan.
- Spread the hashbrown potatoes in the pan. Season with salt and pepper.
- Melt the butter in a medium bowl in the microwave.
- Add the onions, sour cream, and soup to the melted butter and mix together.
- Pour the soup mixture over the potatoes.
- Sprinkle the cheese on top.
- Bake for 45 minutes, or until all is completely warm and the cheese begins to melt.

i used to work for cracker barell all you do is use boneless skinless chicken breast soaked in scrambled egg and run thru flower with you own seasonings

I used to work at cracker barrel as well, the chicken is dipped in buttermilk, not egg. it is dipped in flour, buttermilk and then a 2nd coating of flour seasoned with garlic salt . (I actually think the flour is specifically a chicken breading mixture but it is packaged that way so I’m not exactly sure what is in it.) I hope this helps.

I liked the recipe but it didn’t really taste like the Cracker Barrel version though. Next time I will leave out the butter—way too greasy for our tastes, but I didn’t have Colby so I used Cheddar—maybe Cheddar is oilier?

This is not even close to a recipe I found elsewhere and this one does not sound like it would taste like Cracker Barrel, The one I use includes beef broth, cheese, milk, onions, hashbrowns, garlic powder and salkt and pepper. MMMM fabulous!

The only recipe for this that I have come across that uses beef broth would be Todd Wilburs recipe over at Top Secret Recipes. His recipes are usually about as accurate as it is humanly possible to be.

This has to be one of my favorite recipes ever. I don’t care where you take this pan of hash browns, they will be gone. It is easy to make, and you can swap out different cheese if you desire.

We made a low-fat version of this hashbrown casserole. We used non-fat plain yogurt in place of the sour cream, low-fat shredded cheese and the 98% fat-free cream of chicken soup. We did the rest as the recipe called for but agree that it would be better if we mixed everything first then added some of the cheese on top. The guys were skeptical of the taste of the yogurt but when we all tried it they were amazed that it tasted just like sour cream! There were two families eating and all agreed that this would become a staple in their healthy meal plans.

Another way to make this dish is to add crushed cornflake crumbs on top. Pour melted butter over that. About 10 minutes before removing from oven, sprinkle cheese on top! Now you have a cheesy, crunchy, top! This was the way I was raised making this dish, long before I ever ate at a cracker barrel or even heard of one, believe it or not. My family has been making this dish for years.

I used 98 percent fat free Cream of Chicken soup, half a stick of butter & 1 c of sharp cheddar (it’s sharp so you still get lots of flavor) to lighten it up a bit. I love this casserole but it makes so much! I cut the amount of hash browns almost in half but used the same amount of the mixture on top. Delicious!

Oh, I forgot to mention before…..that I substituted Colby-Jack cheese mixture, instead of the Cheddar, and it tastes just as good too !!!
I still put the 2 cups of cheese called for in the recipe, into the mixture, and then sprinkle some on top of the casserole, (about 20-30 mins. into baking) so that it will have a nice melted cheese topping on it !!

I also agree with Jenny & Gina. It’s better to mix everything together, including the cheese. As far as the cheese goes… a waitress at the local Cracker Barrel told me that she watched the kitchen crew mix up a batch and they mixed everything together, and used 1/2 cheddar cheese and 1/2 "Velvetta"! We love it…
Especially with the Grilled Chicken Tenderloins.

I used to work at CB and the recipe posted by DCelle is the recipe. The only difference in this one is the addition of sour cream. I actually like it better with sour cream. One thing that should be change about the recipe above is that all of the ingredients are mixed together and then baked. I love this recipe though!! so good!

Amazing how some people can be so mean and ugly! I think the recipe is pretty close…not exact, but hey….that is why this is copykat recipes. they are close in flavors, not exactly the same. Most places can not give out the real thing, so people come up with something close. But to come out and talk trash…shame on you! I know this post is old…but the comments still bothered me.

I agree with "Jenny", on Dec. 18th……it definitely is easier to mix it all up together in a bowl (potatoes included), then trying to pour the mixture over the potatoes.
I also agree with the idea of only using part of the cheese, added into the mixture, and saving some to put on top of the casserole, after it has baked for most of the time called for. It’s a yummy dish though !

I have found that mixing half the shredded cheese into the mix works better for me and topping with the other half. Also pouring the mix onto the hashbrowns was a little bit of a chore, so I mix everything together and then it goes into baking dish. Family Fav!
