How to Make Chicken Alfredo One Pot Method

There is nothing complicated or difficult about making this dish. Here’s what you do in brief:

  1. Sauté the shallots or garlic in butter.

  2. Pour the pasta into the skillet and add salted water.
  3. Bring it to a boil over medium-high heat then reduce the heat to simmer until the pasta is softened and the liquid is absorbed.
  4. Add the cream, parmesan, chicken, and shallots/garlic.

Ingredients

  • 16 ounces dry pasta
  • 1 tablespoon butter
  • 1 teaspoon chopped garlic or shallots
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 2 cups cooked chicken
  • salt to taste
  • chopped chives if desired
  • mozzarella cheese optional

Instructions

  • In a large pot, cook the pasta according to the package directions. Drain pasta.
  • In the same large pot, saute minced garlic in 1 tablespoon of butter. Saute over medium heat until the garlic is tender.
  • Stir in heavy cream, Parmesan cheese, drained pasta, and chicken. Blend until the cheese has melted. Season to taste with salt and pepper if desired.
  • Sprinkle with chives and add mozzarella cheese if desired. You can pop the pot into your oven set on broil if you want to brown the added mozzarella cheese for an added effect.

The secret to restaurant-quality alfredo at home is using freshly grated parmesan cheese. Pre-shredded varieties contain anti-caking agents that prevent proper melting and can make your sauce grainy. Take the extra minute to grate it yourself—the difference is remarkable. For an extra flavor boost, reserve a tablespoon of pasta cooking water before draining and add it to your finished dish—those starches are liquid gold for sauce consistency.

  • Protein: Substitute shrimp for shrimp pasta alfredo or shrimp fettuccine alfredo if you go with fettuccine. Other tasty ideas are thinly sliced chicken sausage or prosciutto.
  • Pasta: Instead of fettuccine or other long pasta, you can use your favorite short or medium pasta or noodle – farfalle, penne, rigatoni, rotini, shells, ziti, etc.
