I still remember the first time I tasted Applebee’s Fiesta Lime Chicken. During a road trip with friends, we stopped at an Applebee’s just off the highway. I wasn’t expecting much—just a quick meal before getting back on the road. When my plate arrived with that beautifully melted cheese and zesty aroma, I knew this wouldn’t be an ordinary chicken dish.
One bite, and I was hooked. The tender chicken, tangy lime notes, creamy sauce with just a hint of spice, and perfectly melted cheese on top were comfort food with a south-of-the-border twist. Before we even left the restaurant, I was planning to recreate it at home.
